FANCY baked spuds toppings

I'm not talking about caviar topped potatoes, but I am looking for ideas that feel a bit more special than cheese and beans to serve to a large party.

Scoop out and mix inside with cheese and spring onion, then put back in oven for 10 mins.
or same thing with blue cheese

have different options - a bowl of cheese, a bowl of tuna mayo, a small pot of chilli.

also have several different salads to accompany them so the potatoes aren’t the only thing - it’s easy to make salads look fancier by sprinkling pomegranate seeds, or toasted pumpkin/sunflower seeds on top, or make one with multicoloured tomatoes.

Scoop out the insides, keeping the skins for later, and mash well, then add one of the following.

1 - mix in a pot of caramelised onion hoummous and feta. Stuff back into the shells and rebake for a further 15 - 20 minutes.

2 - mix with crispy fried bacon bits or lardons, cooked garlic mushrooms and brie chunks. Stuff and rebake.

3 - mix in a jar of red pesto then scoop back into the shells. Top each spud half with a couple of slices of pizza pepperoni before rebaking for 15 mins or so. I chuck in sliced olives with the pesto sometimes too.

4 - while spuds are cooking, fry onion slices gently till really soft and sweet. Add a tablespoon or two of curry paste (heat of your choice) and fry off to cook out the rawness, then mix into the potato mash, stuff the shells and bake again. Serve with mango chutney, raita etc.

I have done a build your own jacket potato station for dhs siblings and spouses before. Worked out great.

Filling options were:

Beans (salt, pepper, chives)

Cheese

Tuna salad (green and red pepper, Chives, red onion, Sweetcorn, mayo)

Normal veggie salad with feta and olives

Chicken cubes (just chopped up grilled chicken so it looks like croutons)

Spiced chick peas

Coleslaw

Barbecue sauce, Ketchup, mayo, hot sauce on the side.

It worked so well and everyone's plates looked different.

Who knew the trick was to scoop out the insides and rename. Sadly won't be able to do that on the day. I was thinking along the lines of a toppings bar with a few options jpo

Not fancy ut yummy. Boiledvehg,cheese triangle, grated cheese and red onion. Mix all together

Spicy southern crab. This recipe therecipecritic.com/hot-crab-dip/ is amazing, just make sure it's a thicker consistency. If I'm on death row anytime this would be a serious contender for last meal.

Steak and mushroom strips in a stroganoff type sauce.

Sausage gravy (again southern gravy as in biscuits and gravy) with a side of okra

Pepperoni'pizza' sauce and mozzarella. Mix up a basic thick tomato, olive and herb tapenade, add some pepperoni and serve with the melted stretchy mozzarella.

Mushroom in marmite. Mixed Mushrooms, fried in garlic butter with a tsp of marmite. Add stock. Reduce. Add creme fraiche and parsley. Nom nom nom

Gorgonzola and leeks (if you are ok with fruit in savoury dishes grate apple in when you cook the leeks)
