Salt and pepper chips (like from Chinese takeaways) recipes?

Has anyone got a good recipe for salt and pepper Chinese takeaway chips?

Vegetarian please.

Can't go wrong with Chin and Choo from Ziangs Food Workshop for any Chinese takeaway recipes. I've followed them for years and made their recipes so many times, including this one. Short Tiktok version

this is what I do - its even better if you use potato waffles though.

Ingredients
Oven chips
Spring onions
Garlic
Ginger
Chilli
Soy sauce
Chinese 5 spice powder
Coriander

Method
Cook oven chips as per packaging.

Finely slice spring onions, garlic, ginger, and chilli. Chop coriander but keep separate.

A few minutes before removing chips from the oven, fry the chopped aromatics in neutral oil in a hot pan.

Once golden and fragrant add in a pinch of 5 spice and soy. Toss through the chips and coriander so they are evenly coated.
