Hot/ spicy Indian veg curry recipe recommendations

Hosting my mum and brother this weekend for her 85th birthday. They are staying 2 nights and one lunch.

I was thinking of doing a curry on Saturday. I have a tried and tested chicken curry that my DH and DD love. But as DH a complete carnivore, no idea what curry to make for my veggie DB. He also likes his curries to be hot. He does eat paneer so any suggestions? I have Meera Sodha’s Made in India cookbook but not sure if the veg curries would be too mild for him.

Panicking! Please help 😀

I've made this curry so many times and it is lovely. You can add in extra chilli and/or just use hot chilli powder. I add in fresh coriander and a squeeze of honey at the end too. Absolutely delicious!

Aubergine and chickpea is my favourite. Just do your normal recipe and substitute meat for veg. Butternut squash is also good as it holds well and is filling.

Ooh actually that potato curry might be perfect. Thanks so much. The chicken curry I’m making is South Indian with coconut milk so for those who want both, they should go nicely together

Spinach, okra and tomato seem to hold heat well ime. Madhur Jaffrey is always my go-to gal for veggie curries - I don't cook really hot so couldn't recommend a particular one but maybe look for one of hers using those ingredients.

Just do the same curry as your chicken one, but with veg and/or paneer. Or even quorn pieces if he likes that. Also he's your bro, can't you just ask him what kind of curries he likes?

The Hairy Bikers do an excellent vegetable curry - you'll have to google it. Too spicy for me ( have to halve the chillies) but have a lo tolerance.

lentil dhal, spinach and potato, carrot and chickpea, any curry can be made as hot or not as you like it, just vary the amount of chilli you put in.

I’m either going to try Shemovesshemoves21 potato curry or Housenoobs idea of making one curry but splitting it in two and adding paneer to half if I can work out how to split the recipe up. That might work if I just use BlackForestCake’s advice and just add extra chilli. Duh! Don’t know why I didn’t think of that. I follow recipes too religiously.

Housenoobs I could ask my bro but he would say I shouldn’t go to any trouble on his behalf and we should get a takeaway. I don’t want to do that as I can’t really afford a takeaway for 6 plus wanted to make an effort as is DM’s birthday

From Meera Sodhas book both the chana masala and the kidney bean curry are tasty, I usually double the amount of chilli she puts in. Oh also the spring cabbage but we tend to have that as a side rather than a main.

It helps to have a protein - so paneer or chickpeas or similar.
