What is the best recipes during summer time?

Any special recipes during the summer time. Please suggest me

Need more information! What country are you based in, is this for kids or adults or both, etc. eg. I love eating salads all summer but my kids would disagree!

Salads here too - I change the protein & vary the other ingredients & the dressing.

Frittata
Spanakopita
Paella
Couscous salad
Salmon traybake
Baked gnocchi

One of my favourite summer recipes is from River Cafe Cookbook Easy. You make a sauce with halved cherry tomatoes, fried courgettes (that have been chopped, salted and rinsed), capers, garlic, oregano, red wine vinegar and olive oil. Then serve with spaghetti.

Also, main meal salads, such as Greek salad, Nicoise, couscous, Caesar salad made with chicken or hard-boiled eggs, Caprese, cobb salad, etc etc.

If you eat meat (pork), I also like pancetta-wrapped melon in the summer.
