Nut roast

Does anyone have a really good recipe for nut roast?

I'm looking for a proper nutty nut roast. Not one full of mushrooms or rice or breadcrumbs. Nothing against those things, but so many recipes are not very, well, nutty.

So nuts, something to bind them, a resultant roast which slices (it's ok if it's a bit crumbly) and is delicious.

Would you accept one that’s mostly nuts but does have some breadcrumbs in? If so I can oblige. It’s vegan. It freezes a treat and I make it often.

This is what I make for veggie DD: a handful of mixed roasted nuts chopped roughly- I keep these ready in the freezer in a jam jar- half a fried onion, thyme, sage, cubed squash or sweet potato and a spoonful of peanut butter. Mix well with salt and pepper and bake. More scoop-able than sliceable but is v delish.

Mary Berry has a fantastic recipe I made several Christmases in a row for a vegetarian and most of the meat eaters would enjoy a piece too, like an extra type of stuffing! It's there if you Google it- wrapped in aubergine. Highly recommend.

Jack Monroe’s festive nut roast is absolutely delicious and not just for Christmas. No breadcrumbs as such but sage & onion stuffing is added. It’s vegan too.
