Another vote for burnt aubergine chilli, then halloumi aubergine and harissa burgers - the onion relish is gorgeous and Mexican chicken burger with Chipotle and lime is nice.

American pancakes are a big hit with the kids.
A bit boring compared to some recipes on here but I love the cottage pie recipe I found on there.
And I also like the chicken fajita pasta, i find you need to use more of the spices than the recipe says though.
