Anyone made ice cream with instant custard?

Looking into homemade ice cream recipes and so many of them use egg yolks ie custard. If I want custard I buy a packet of instant - just add hot water etc. So I think it would do fine for ice cream too. Has anyone tried it?

I’m not sure. The fresh stuff in tubs works. My easy recipe is made of whipped cream and condensed milk with a bit of vanilla extract, I can’t remember the exact proportions but think its one can of the milk and a 500mL tub of cream whipped.

I don’t think a packet of instant custartd, made up with water, will make a satisfactory ice cream really. A pot of ready made dairy or vanilla custard from the chiller cabinet might be better.
For a quick icecream mix i use the condensed milk and whipped cream method, as above. It’s ok but it melts quickly.

Thanks I might try some anyway as an experiment lol, I'll report back. Also thinking of using some bramble jelly as flavouring. How hard can it be? 🤣

I love ice cream but trying to find ways of making my own with reduced sugar etc.

I don't have a machine so I'm guessing I just whisk it and freeze?

The thing is, if you make instant custard and then put it in the fridge, it doesn't turn into a lovely cold and creamy custard, it turns into a weird custard jelly aberration. So I imagine it will be more like custardy ice than ice cream if you try to freeze it. Or a kind of custard sorbet maybe, if you can keep taking it out to stir.
If you're going to give a go anyway, please report the results!

Not instant custard but I've used custard power with milk and cream to make a custard, added flavourings - usually banana and chocolate chips and put that through the ice-cream maker. Its good.

Yes, the traditional Birds custard powder that you make with milk does seem like a better bet. I suspect they are all pretty high in sugar though.

You can make lovely ice cream with fresh custard!
Instant is just corn flower and colourings so wouldn't be that great.
