What is your favourite slow cooker Mexican recipe?

Just that really. Noticed I haven't made a Mexican inspired dish in a while, so looking for inspiration!

Not a slow cooker recipe, but as a slow cooked this birria could work well if adapted for a slow cooker and is absolutely delicious, if you don't feel like doing to queso taco part (which is extra work but extra tasty) it works well just over rice.

I second the birria suggestion. Chilli con carne is the obvious one, I like to do it with diced beef rather than mince.

can do it on the hob, in a slow cooker and my personal favourite - the pressure cooker!

it’s easy to adapt to what you have in and ramp up the spice if you want to.

Carnitas, brisket chilli, or I just use it to make shredded chicken for enchiladas / burritos.

Highly rate Mary berry's Mexican lasagne, you could probably adapt for the slow cooker.
