Favourite low carb/keto(ish) recipes?

I'm going low carb (ish) - cutting out bread, flour, pasta, refined sugar, rice etc - I've done it before and find it a pretty easy way to lose weight and feel better. I still eat unrestricted fruit and veg (except bananas/potatoes) and don't count carbs - so not keto really.

I'm fine for breakfast and lunch but find dinner a bit tricky - adapting meals for the family - anyone else eat like this or similar and have any recipes/meal ideas to share?

My treat meal is usually steak and salad (family have chips), more basic would be chicken tray bake (with potatoes that I don't eat)...

I like fahitas but without the wraps, i just put it all onto a pile of salad instead

I have never done a diet like this but you could have a bowl of chili with salad on side, the family can have rice, add extra veggie to it and its healthier for all.
Do you remember years ago when spiralizers were all the rage my kids loved spiraled courgetti instead of pasta with bol sauce.

Do you allow yourself sweet potato's? some do on a low carbs in which case make spicy wedges to accompany anything really.

salmon with pesto is nice on a bed of oven roast Mediterranean style veg or other fish

I follow a low-carb diet. In terms of adapting family meals, I eat cauliflower rice in place of rice, courgetti is a great substitute for most pasta meals, cauliflower mash is lovely with meals like stew and makes a great topping for shepherds pie - I prefer celeriac mash on fish pie. Roasted swede chips are much tastier than normal chips and go with loads of things. When we have a roast dinner, I do oven roasted veggies and maybe tzatziki with mini instead of roast potatoes etc.

Moussaka is a great low-carb meal. For the topping, I use Greek yoghurt mixed with Parmesan, an egg and a bit of nutmeg which sets when cooked and it's lovely.

I love pizza, be it a meat base (meatza) or the one made with mozarrella.
I made keto cheesecake and it was insanely good. I also love almond and flaxseed microwave bread. All recipes on diet doctor.
Cheese crisps made by grating little cheese mounds and then melting them in the oven for like 10 mins. There was a point when I wasn't losing weight on keto because I could easily eat 2000 kcals or more on it but if you're doing low carb for health and not bothered about losing weight then there is a low carb version of everything you might fancy. the world is well and truly your oyster.

Stuffed peppers - serve with potato wedges for the family
I do this beef stir fry or chicken and serve with a side of jasmine rice or noodles for the family
Bolognese with courgetti for you and pasta for the family
Curries - either have just a big bowl of curry or serve with cauliflower rice. My best curries for cauli rice are coconut fish, vegetable and chicken katsu.
Stuffed aubergine - serve with jacket potatoes or flatbreads for the family

These are wonderful, thank you everyone so much! Need to learn how to make cauliflower rice..

If anyone has any low carb cookbook/websites to recommend I’d love to hear too.

I do find I lose weight (a stone or so) quite quickly, probably mostly as I don’t feel as hungry and can’t snack on crap/overeat as much… I also feel healthier in general, but I can’t hack it in the winter! I’ve decided to do it six months of the year and see how it goes :)

I make fritata with roasted courgettes, red onion and peppers. Shakshuka is really good for low carb.

I love bacon, roast red pepper out of the jar, slice of cheese and Mayo on lettuce wraps

Broccoli can replace pasta IMO (I had it with chicken tikka tonight and Bolognese last night)

Tuna omelette or frittata for high protein low carb

Cauli rice is so easy! Cut cauli into florets and blitz in a processor or chop like herbs into small pieces. Fry in coconut oil / seasame / olive oil depending on the cuisine and a decent sprinkling of salt.

I love mushrooms and stir fried sliced sweetheart cabbage as a side to any kind of pasta sauce / casserole type meal. Family have pasta / mash / wedges.

Any kind of meat and two veg based meal where I just double up on green veg and they have carbs eg pork steaks topped with blue cheese, chicken breast in mustard sauce, chicken in bacon and cheese, chicken topped with leek and feta..

Cauliflower cheese made with cream is so good.

Chicken and cashew nuts with cauliflower rice.

Just put the cauliflower rice in the microwave for a couple of minutes. Fry onion and garlic and chicken and anything you like such as red peppers. Add the cauliflower rice and whatever flavour you like, like soy sauce, and add the cashew nuts

I did a keto diet a few years ago, but still some of the lower carb things now. I used a site called carb manager which also had an app to help my log my carbs. There are some good recipes on the site too: 50,000+ Low Carb & Keto Recipes | Carb Manager

Ground almonds (almond meal) makes a good alternative to bread crumbs.

This is a quick, tasty chicken recipe. I call it fake KFC chicken, but I oven bake. It would be more like KFC if fried though. Measurements are approximate.
500g- 1kg chicken thighs, or breast in largish strips (I use skinless now, but during keto did it with the skin on)
1-1.5 cups Almond meal
1/2 teaspoon celery salt
1 tea black pepper
1 tea onion powder (not with added salt)
1 tea garlic powder (not with added salt)
1 tea Italian herbs
2 tea paprika

Mix the dried ingredients and press the chicken into it. No need to flour or egg- just the crumb mix. You can even double crumb for a crispier coating. Bake or fry till cooked.

For cauliflower rice, I bake the cauli florets. If you boil or steam, it picks up extra moisture and gets soggy. Baking also gives a slight nutty flavour- but check it often as it can easily burn! Tahini mixed with lemon juice is a nice drizzle coating for the cauli if serving as florets.

I also love sang choy bow, which uses a lettuce leaf as a wrap.

My favourite is this. Fry bacon, onion and a lot of garlic in butter. Set aside. Fry a lot of sliced mushrooms. Set aside. Add chicken breasts fillets to the pan and brown them. Add the bacon and mushrooms etc to the chicken and cook through. Add a tub of single cream, some sea salt and a lot of black pepper.

Serve with cauliflower.
