Foolproof recipe for cupcakes

Please hit me with your best recipe, my last attempt was more biscuit than bun!

Weigh 2 eggs in their shells and remember the weight. The rest of your ingredients (butter, caster sugar, self raising flour) will be the same weight.

cream together butter (stork makes good cakes) and caster sugar until really light in colour and fluffy. Whisk eggs and add to the mixtures. Mix together. Sift in the self raising flour and fold in gently in a figure of 8. Add a drop of vanilla extract and that is it.

I have the best results cooking them at a low heat (say around 140fan) for a longer time - 25 minutes or so. It stops them getting a domed top. They’re done when they either spring back if you press them gently or a toothpick comes out clean

Ps that normally makes 12 bun sized cupcakes. To make more just add eggs and increase the amount of the other ingredients to match
