If i roast Butternut squash will it freeze well?

I think it'll go mushy. Batch cook soups/stews/curries with it as an ingredient and freeze portions, is what I would do.

Well you can buy it frozen so I don't see why not.

Cut it in half widthways. Use the part with the seeds in to cook a meal. Put the unused part in the veg rack and use it in a few days.

I cut it into cubes and then freeze raw. You can then use/ roast straight from frozen.

I wouldn't freeze it after roasting. Cube it, blanch it and freeze it. Then you can cook it as you wish.

This! We do this with squash's & pumpkins - work's absolutely fine - just add to whatever you need straight from the freezer.

Thanks I kind of thought freezing would be bad but I dont want to put the oven on multiple times

I would freeze then cook but if looking for fuel savings then if you want to use in a risotto it would be fine roasted then frozen.

Get it lovely and caramelised and then blitz with stock. Makes a lovely purée to use as soup base and freezes well.
