I need some lunch ideas that doesn’t consist of bread & want it to be fairly healthy. I occasionally have some sort of salad but looking for different things I could have?

So many options! I get it depends if you have access to a fridge or not, but even without a fridge, many dishes are safe for 4-5 hours

Soups (buy a flask in a camping shop)
Roasted veggies
Lentils such as Tabbouleh or chickpeas salad (I love cubed tomatoes, cubed cucumber, cubed beetroot , half a chickpea can with a mustard dressing)
Quinoa
Niçoise salad or even just the green beans dipped into an homemade dressing
Steamed cauliflower or broccoli
Marinated tofu with some greens
Cooked chopped spinach with lemon dressing (check in mirror for pieces stuck in teeth. Bring floss to work)

Right now, I just love red kidney beans. On their own, with just salt and pepper and then a few baby Roma tomatoes or a green pear.

Soup or baked potatoes if you have means of heating things
poke bowl if you have a cool-box
everything you’d have in a sandwich and banana for pudding

Mixed bean salad with added cubed ham or tuna.

Pasta salad with roasted vegetables and sliced chicken.

Chicken Caesar salad.

Rice salad with tomatoes & prawns.

Cous-cous with peppers, olives, tomatoes and cubed feta.

If you have a food flask, make an Asian style broth with vegetables & noodles.

Frittata.

Omelette, or sometimes a scramble with some kind of protein and some kind of veg - smoked salmon and scrambled egg with avocado is lovely, or scrambled egg, chorizo and mushrooms.

red pepper (uncooked) filled with your favorite sandwich type filling: egg salad is nice as is avocado and cream cheese or ham cheese and lettuce.
i like mine open faced and they can look very pretty.

We like using up leftovers, eg potato frittata, with peppers, etc. or reheated chilli with jacket potato, sometimes risotto, or bubble and squeak with a poached egg.

Microwave omelette using this thingy. 2 eggs, spring onion, mushroom, ham load of cheese. 2 mins in microwave on a bed of shredded lettuce and coleslaw

Supermarket rotisserie chicken.... on a plate. Salt and Mayo. Nom.

Bens rice packs are a good lunch choice. Lots of flavours to suit most tastes, and only takes 90 sec in the microwave.

Soup, get a soup machine and do your own, saves fortune +much healthier too.

Greek salad or roast veg with mixed beans.

Porridge with berries & cream.

Salmon + prawns with cucumber.

Leftovers. I deliberately made too much pasta bake last night and that's my work lunches for 2 days sorted. I've got access to a microwave so leftovers are perfect.

Otherwise I have a mix of salads, scotch eggs, quiche, crackers and cheese, roasted veg and goats cheese, hard boiled eggs, soup, houmous and veg sticks.

I also like a homemade 'pot noodle'. All you need is a kettle and an insulated mug. Noodles, stock powder, finely chopped veg and a splodge of sweet chilli sauce to stir in once the noodles are soft.

I keep a bag of cooked but frozen chicken in the freezer, a bag of frozen veg and some microwave rice.

Couple bits of frozen chicken, fried in a bit of butter.
Microwave a handful of veg, half a pack of microwave rice. Add directly to frying pan with chicken. Give it a good stir up.
Takes minutes.

Change it up easily.
Add half tin baked beans sometimes too, don't rinse the juice, just pour them onto chicken as it cooks in the pan.
Or kidney beans.
Or lentils
Or sliced peppers
Or sliced mushrooms

Roast a chicken.have it in:
Wraps
Pasta,tomato,celery(salad)with a dressing of mayonnaise stirred through.
And couscous with tomatoes and pine nuts
Pine nut and pesto pasta
Roast veg pasta

A form of protein with rice, noodles, lentils etc. Or soup. I never fancy a salad (unless it’s on a sandwich) except when it’s a hot summer’s day.

I don’t eat bread at all (gluten makes me feel dreadful) it’s not necessary.
