Ran out of ideas for lunch

Just that really. I'm having tomato soup & grilled cheese, oven fried breaded chicken & salad, beans & jacket potatoes and some sort of stew on repeat for lunch.
What's everyone having for lunch these days? Need some ideas!

On toast is the easiest lunch option. Eggs, beans, tomatoes, cheese, mushrooms, avocado.
Bagels with smoked salmon and cream cheese.
Omelette/fritata
Toasted pita, crudités and houmous
Salads with tuna, chicken or egg
Cheese and crackers

Couscous salad
Falafel flatbread wraps
Cream cheese and smoked salmon bagels
Feta omelette
Eggs Benedict
Hot pastrami bagels
Ploughman’s
Quiche and green salad
Boston or Tamarind beans on toast
Pesto, mozzarella and cherry tomato pasta salad (or gnocchi, as it cooks quicker)
Pitta pizzas

Soup and bread
Leftovers from the night before
Hummus and pitta
Sandwiches, all sorts

Is this a lunch you need to carry to work or something you just prep and eat at home?

I WFH, so common things I have are:

  • leftovers from night before
  • if the leftover is a roast chicken, I might have a toasted chicken and avocado sandwich, or a chicken sweet corn soup I make
  • If leftover is beef, I might make a Thai beef salad
  • My version of brushetta. If I don't have panini, I'll use baguette or just toast, sliced tomato, red onion, anchovies and fresh basil if I have it
  • If I have left over wraps, then whatever is in the fridge could go in- ham, salad, coleslaw, tomato, hummous, cheese/onion etc
  • Fritatta using any left over veg, served with sweet chilli sauce and salad (basically almost any veg, mix with egg and baked in a dish till set and sliced up)

I forgot, I also do several pastas I make at home for lunch. Pasta alla Norma, carbonara, Pasta con sarde, puttanesca which are all very quick and tasty.

I had pasta today as well. Had it with lemon juice, black pepper, a little olive oil, smoked salmon and rocket.

Rice/noodles with soy sauce and sesame oil, vegetables, fried eggs on top

BarrelOfOtters · 13/02/2023 11:43

Stir fry with whatever is in
Cheese on toast or pizza toast
sardines on toast
leftovers
home made soup
jacket potato

BarrelOfOtters · 13/02/2023 11:44

And sometimes queenie scallops, white wine and cream sauce with garlic - as a special treat when it's just me.

brillianthopefulness · 13/02/2023 11:51

Bagel thin topped with a smidge of tomato purée, ham and cheese and a sprinkle of herbs. Popped under the grill. That's what I'll have today as I'm not working until later.

Similar ingredients are nice in a way and made into a quesadilla.

Soup - I make big batches of BNS & Sweet potato with spices and freeze in portion sized tubs.

I have a cheese and coleslaw wrap with salad and fruit everyday. Never occurred to be to get bored! I have different stuff for dinner each day.

Lentilweaver · 13/02/2023 11:59

Falafel, roast veggies and hummus in a wrap.

DRS1970 · 13/02/2023 12:02

A Ben's rice pouch is a good lunch choice. 90 seconds and it is ready. Lots of different flavours to cater for most tastes.

i'd disagree that it's a good choice.....it's 400 calories of entirely carbohydrates, no protein and no vegetables! Those pouches are intended to be 2 portions.

I'm on "soup of the week" with a sandwich or wrap at the moment, or leftovers from the night before. Often scrambled egg on toast/ bagel if I'm at home.

Boredfriend · 13/02/2023 14:06

Thanks all, noted all the ideas! I'm mostly working from home and would like to use this to my advantage to jazz up my lunches.
I bumped into this deconstructed taco bowl idea the other day and had that today.
Basically layer shredded lettuce with chopped avocados, shredded cheddar, beef mince cooked with taco seasoning and crumbled doritos and season with greek yoghurt / sour cream and hot sauce. Was fab, quick and healthy, highly recommended!

I don't eat breakfast so my lunches often resemble breakfast.

Scrambled egg on toast
Bacon sandwich
Bacon and egg sandwich
Cheese omelette
Beans on toast
Cheese on toast
Cheese and marmite toastie
Cheese and tomato and/or red onion toastie
Left overs from dinner last night
Fish finger sandwich
Pitta bread, hummus, carrots, olives, maybe some salami or ham
Smashed avocado on sourdough toast
Egg mayo sandwich
Tuna mayo sandwich
Ham or chicken and avocado sandwich
Ham or chicken and salad sandwich
Veggie burger in a bun with melted cheese
Peanut butter sandwich
Just Marmite on toast if there's nothing else in!
