Bin day today and need to go shopping so was just clearing out the fridge and I have an experiment going on…
I had
half a red pepper
a yellow pepper
3 slightly dodgy tomatoes
3 old carrots
half a pack of green beans
2 cloves of garlic
1 red onion
All of that is now roasting in the air fryer with some chilli flakes, a bay leaf and a sprinkle of thyme.
I’m thinking blend it with stock when it’s done roasting or maybe a can of chopped tomatoes??
I normally put lentils or rice in my soup to bulk it up - I have chick peas so maybe a can of them instead?
I also have half a bag of spinach to use up So shove that in at the end too?
it’s either going to be delicious or disgusting isn’t it? But if it is delicious I will feel so virtuous 😇
