Your favourite sauce with tuna steak

Looking for some inspiration please.i I tend to do either a tomato, peppers and mushrooms sauce or lemon, capers and herbs, but would like to do something different. Prefer not to have a creamy or white sauce with that particular fish.
What sauces do you serve with tuna? Recipe links would be appreciated, otherwise just an idea of ingredients would be great. Thank you

I usually sear tuna and cook it in the way we do in my native California: I crush up and mix fresh coriander, cumin, mild chili powder, fresh garlic, and a bit of salt (I may even add a pinch of sumac and zaatar these days because I add them to everything 🤪) to make a sort of rough paste to slather on the tuna prior to cooking, adding squeezed lime and a spring onion garnish at the end, cool mayo on the side (with fries or rice).

I serve mine with a salsa - so lots of chopped tomatoes, and whatever else there is that I fancy, so herbs like mint, parsley and coriander, maybe some peach or some pineapple, sometimes a bit of fresh chilli
have it with some boiled new potatoes that have been tossed in butter
YUM

Lemon herb sauce

Ingredients
the juice of 1 lemon
1 1/2 cloves garlic
1 cup fresh parsley leaves
1/2 cup fresh mint leaves
1/3 cup extra virgin olive oil
2 tablespoons capers
1/2 teaspoon black pepper

blitz all above and serve

I do Rick Stein's porcini mushroom gravy with tuna or swordfish, it's a bit fiddly but absolutely delicious

I really like lime with tuna, usually go for something along the lines of lime, ginger, garlic, honey, splash of rice vinegar. Most people would probably add coriander but I really don't like it so just I use parsley.

Nduja is also really good with tuna. I just add to some, chopped tomato's, red onion and fennel seeds with some balsamic vinegar.

Soy sauce is good with fresh tuna, add some lemon juice too

Bobbybobbins · 27/01/2023 20:33

Glaze with soy sauce when searing then could serve with a sauce with some mix of soy, sesame oil, sweet chilli, oyster sauce depending on what you prefer

I marinate it in a sauce of crushed garlic, ginger, soy sauce, teriyaki sauce, splash of white wine vinegar over night then cook it in the pan. Yum.

Salsa verde -- lots of chopped parsley, mixed with four or five tbs of olive oil, a fat clove of garlic, juice and zest of a lemon, a tablespoon each of capers and dijon mustard and a couple of anchovies, all briefly pulsed in a blender. You want it to have a decent bit of texture.
Either warm it gently in a saucepan on the hob or serve at room temperature. Spoon it over and enjoy. 4 servings.

I love salsa with it!

RockingMyFiftiesNot · 27/01/2023 20:44

Thank you, some lovely ideas

Teriyaki, or miso.

TeaAndThenMoreTea · 27/01/2023 20:53

Mango salsa goes really well with it - loads of recipes for various versions out there

ChatSamosa · 28/01/2023 08:34

Not a sauce but a salsa. Mango (or pineapple) with mint, coriander, shallots, tomatoes, lime juice and chilli.

Hobbesmanc · 30/01/2023 12:28

Lots of lovely ideas. Gordon Ramsey does a delicious version of a Niciose where he parboils sliced salad potatoes then sautés then in oil and garlic to get them crispy. Flash fry the tuna steak in the same pan with some capers and lemon juice and serve with the usual niciose ingredients and a light French dressing.

AdaColeman · 30/01/2023 12:49

I sometimes do a chunky homemade tapenade with tuna (or swordfish) and serve with a salad of bitter leaves.
Or another favourite is baked in foil with ginger, garlic and spring onions and served with ponzu sauce, or sweet chilli sauce.

thesonicoscillator · 30/01/2023 13:05

Sear tuna. In a bowl mix v good quality extra virgin olive oil with lemon juice, salt & pepper , crushed garlic ( not too much as it's going to be raw) and dried oregano. Drizzle this raw sauce over the steak and any veg or salad you might have with it. I use it for Swordfish steaks too

gogohmm · 30/01/2023 13:09

Soy, sesame oil, ginger, chilli, honey, sesame seeds and spring onions

gogohmm · 30/01/2023 13:10

I sear it no more

whoruntheworldgirls · 30/01/2023 13:13

We pan fry it with chilli flakes, salt and black pepper and serve it either with spaghetti and broccoli that's been boiled then tossed in the pan after the tuna has been removed or roasted potato cubes lightly dusted with cajun spice and roasted broccoli

squishee · 30/01/2023 13:19

A mayo / wasabi mix. Capers on the side.
