Freezer stash gluten free and dairy free

Hi all I'm looking to build up a freezer stash of food. Needs to be gluten free and dairy free.

Would really appreciate any suggestions

Make some homemade pesto, (vegan cheese), basil, watercress, pine nuts, walnuts. Then just freeze. Cook some GF pasta to go with it.

Veggie chilli - lentil, red pepper, onion, beans of any variety, sweetcorn (add any other veg you have), passata, chilli, cumin, vegan chocolate. Then just cook a jacket or rice to go with it.

Bolognaise. You can go half and half mince and lentils to reduce cost.

Sweet lamb casserole. Slow cook diced lamb with red onion, redcurrant sauce, pancetta and whatever veg you fancy eg pepper.

Cottage pie (use non dairy milk)

Chicken casserole. Diced chicken, baby mushrooms, sweet corn red pepper, passata and sun dried tomato paste.

Beef casserole. Slow cooked beef, onion, carrots, bacon, celery, red wine.

Also Becky Excell has loads and loads of GF recipes where she makes suggestions to adapt them to being dairy free or vegan or low fodmap.

Most of the sort of food that you'd batch cook and freeze is either gluten and dairy free by default or very easy to convert - bolognese, cottage pie, stews, casseroles etc.

@TwilightSilhouette Some amazing ideas thank you. I love becky excell she has some great stuff.

@TheShiningPup I do have some of that stuff I was just looking for some more stuff to pad it out. I end up just eating meat and potato in various forms 🤣

Just to add to the above - Soups and curries! Plenty of GF and DF recipes for these and they freeze very well.

Soups with beans or lentils are especially useful as they are filling enough that you don’t want bread with them.

I keep a few of those microwave rice pouches to have with a defrosted curry for when I need an instant meal - I am not sure if they are GF.

Chick pea, spinach and potato curry. With the rice pouches if you haven’t time to cook rice. Tesco own basmati is 35p per pouch, serves 2.

Dhal. (Same)

Spicy Veg Tagine. Serve with the packets of cous cous that take seconds to cook.

Thai curry. Serve with the wide rice noodles that take seconds to cook.

Chilli . Serve with corn nachos (check packet for gluten) or rice, and roughly chopped / smashed avocado on top.

Home made fish cakes. Use cornmeal instead of breadcrumbs.

Hsve you tried the Taming Twuns site- chicken satay. Delicious. I buy the garlic and ginger mixed together in a jar- job done.

Chicken soup, cook a big batch, eat some on the day and freeze the leftover broth only. Same with beef stew. Then it's quite easy to make a simple dish with the frozen broth, just throw in some peas, mix in small cooked pasta or rice.
