Can I make a vegan and gluten free rice pudding?

DS's friend is vegan and gluten free and stayed with us last night at short notice.

I think we'll be having him again early next week. He mentioned that he loves rice pudding and really misses it now he's vegan. I was wondering if I could use an alternative milk to make it with but I know that some of them take a lot longer to thicken (if they ever do) than others

Which milk alternative would be best please (and is definitely gluten free) and would it be sweeter than normal so needing less sugar.

Hmm, I've never made it but I'd have a go with coconut milk. You could try with either the 'drinking' type coconut milks like Koko, or the type you get in tins like you'd use in curries. The tinned might work better tbh.

Definitely GF (unlike oat), nice taste, would probably thicken ok

You can use pretty much any plant milk alternative.

for a creamy one I’d use tinned coconut milk
or if he doesn’t like coconut, try the barista style oat milks

I make it with almond milk. I also add some vanilla bean paste, maple syrup and peel a couple of strips from an orange with a veg peeler and add that to the dish. A few nobs of vegan butter on the top as well. Bake for 1.5 hours.

I serve it with a homemade berry compote.

Thank you all so much - only thing is now I wish I'd never asked it all sounds absolutely gorgeous and it's 10pm and I'm actually considering making rice pudding!! I've even got a can of coconut milk and some cardomon . I'm definitely going to try ...

But tomorrow becasue I have to walk the dog and go to bed.

I use a mix of coconut milk and coconut cream. Delicious served with mango compote.

I've done this - so easy and super rich. Use soft brown sugar if you've got it, it works really well with the coconut!

Yes, I used to do this when I was on an exclusion diet. Just check the rice is gluten free, sometimes it's been processed in a factory on the same machines as wheat.

Baked rice pudding with coconut milk and cardomon was delicious. I often added extra coconut cream too

Slow cooker, Arborio, rice milk, vanilla, lemon rind. Cook until its done. A lush winter lunch on a cold day.

To make it really snazzy, make it early, allow to cool, stir through a couple of egg yolks then fold through the stiffly whisked whites. Cook in a water bath for half an hour or so.

Sounds gorgeous. Just don't use egg yolks for the vegan!

If you don't have any objections to Nestlé, they do a vegan carnation 'milk' . I know a few recipes use condensed milk, but I've not tried this one.

Sorry. Brain fried in the heat here today. But you can do it another day. Juice from tinned chick peas whips up well, though.
