They're gutted, etc etc.

DS2 wants me to wipe off the ice, and he can eat them raw, but I'm a bit at that plan ... I'm inclined to cover them in breadcrumbs and roast them, maybe?

I always do Jamie Oliver thing of putting a bunch of thyme in its tummy and grilling or roasting it in the oven.

Stuff with a sprig of rosemary and a slice of lemon. Sprinkle with sea salt and freshly ground paper. Grease some foil with butter, wrap the trout in the foil and bake.
