Lemon meringue pie

What is the best recipe you have used for lemon meringue pie if you've tried more than one?

Will default to BBC Good Food otherwise.

Want to try making a homemade version. Used to buy Morrisons Best pie but discontinued it seems.

Greens pack mix!

mathanxiety · 13/01/2023 21:45

I use one from the New York Times Cookbook. It might be online.

I use a pate sucre crust or more often, graham cracker/ digestive biscuits.

I always do Mary Berrys

Greens pack mix!

Yes to this over and over again. It's perfection

Delias lemon meringue pie, amazing every time! (And very easy Grin)

My supermarket has lots of Betty Crocker packet mix but I've never seen any Greens stuff or heard of it in truth.

I do feel using packet mix is still a bit cheating though and did want to try from scratch.

Make it from scratch, packet mix is rotten, too sweet and not lemony enough or even real lemon tasting. I make a very simple lemon mix with lemon juice/cornflour/egg yolks/water/sugar, no faffing around all into saucepan and just keep stirring. If you have cup measure I can post it, it's one of the few things I use the cup measurement for as it's just handy but think I wrote down the gram measurements for someone at one stage too!

Delia's, but I use a ready made pastry case.

with meringue on top.

Delia's.

Packet LMP is nothing like the real thing.

SoRuff63 · 14/01/2023 18:14

Another vote for Delia.
But I make a sweet rich shortcrust pastry base from Leith’s baking bible.
My favourite dessert - absolutely has to be home made though - never tasted a bought version that’s in the same league.

Inextremis · 14/01/2023 18:20

I use the BBC Good Food Ultimate Lemon Meringue Pie recipe - the orange makes a difference, and it turns out well every time.

ouch321 · 14/01/2023 23:44

Winner seems to be Delia Smith version.

I'll try and give it a try and report back for any future searchers for the same.

kateandme · 15/01/2023 18:40

The only thing the greens does is put all the lemon curd ingredients into an easy pack.so you still make your own.and have t5o do the pastry and mirangue.

marylou25 · 15/01/2023 20:22

But the greens is not fresh lemon juice or rind. No comparison taste wise to fresh stuff plus it's too sweet as you can't control the sugar, in fact sugar is main ingredient and I've used very few of the others!

INGREDIENTS
Sugar, Cornflour, Maltodextrin, Potato Starch, Acids: Fumaric Acid, Citric Acid, Flavouring, (Sulphur Dioxide), Salt, Acidity Regulator: Trisodium Citrate, Colours: Curcumin (Milk), Annatto Norbixin.
