Would you eat steak with use by date of yesterday

I bought a cowboy steak for Christmas lunch but was ill. Ate it last week, well past the use by date and I'm still alive. Gave it a good rinse just in case, marinated it in wine, truffle oil, herbs and spices then into the air fryer it went. Cooked it medium rare and it was both tender and delicious as it had aged well. We waste too much food by being precious about use by dates. Sniff test, always.

It doesn't suddenly go off at the stroke of midnight on the use by date - if it smells fine, eat it.

Yes - you'd be able to tell if it was uneatable upon opening.
