It looks tasty but it's not the most enticing name for a soup! I may have a go at this for tonight, with some slight adaptation - olive oil, ordinary potatoes (what are fingerling potatoes?).

Not a clue - I used normal ones. I also added a bit of chilli powder and some coriander

I have a measuring cup. It makes a lot of soup! Used our big Le Creuset casserole and it’s full to the brim.

I did make this last night. Left out the potatoes as we had it with bread. Didn't have any uncooked whole lentils so stirred in a pouch of cooked French lentils towards the end. Very nice, would do it again! I used coconut milk powder as I have some that needs using up, rather than a tin of coconut milk. For my taste, soups like this are much nicer for having a lot of lemon juice so I upped the quantity there. Used frozen spinach, four small carrots, two medium to large onions, four cloves of garlic and four or five stalks of celery. One mugful of red lentils. Added a touch of chilli powder too.
