I need to stop buying sandwiches - so my plan is to make a freezer full of soup that I can freeze in single portions and take one every day.

What are your best soups recipes that freeze well and will fill me up at lunchtime?

Broccoli, celery & stilton.

I use the thick stalk that some people throw away, just peel & chop.
Peel the celery & chop.
Cook in butter/oil, add s+p, chicken stock, simmer until tender.
Add crumbled stilton, & maybe cream, then blend.
Adjust seasoning & add water if necessary.
Freezes very well.

Leak , ham and potatoes.
It's one of them soups I can't really make a small amount if so I always freeze some

Gammon shank boiled till cooked , shred or cube , save the water
About 2 lb of spuds cubed small and boiled with no salt till tender.
Split the spuds 2 thirds gets mashed 1 third put aside
Two big leeks sliced finely put aside ( about 2 / 3 inches ) some of the pale green bit ,

Once the spuds are mashed add the gammon and leek then bit by bit add the gammon water lots of pepper , no salt there us plenty in the gammon water untill it's the constancy you want , imo this soup should be very thick . ( I have buttered toast with it in the past ! )
When ready to eat or freeze add the remaining spuds and leeks

If you can't get hold of a shank or want to make a quicker version sub the shank for bacon , buy cooking / pie bacon it's really good value and ideal for this soup. And use either water or veg stock cube instead of shank water

It's very filling and very cheap to make.

Butternut squash, sweet potato and carrot, add onion, garlic and lots of ginger, fry first then add stock, blend once cooked, season to taste.

I sometimes make soup with leftover (raw) veg, a mix of onion, celery, any root veg, and pulses (either lentils, split peas or a can of any pulses). I add a tsp or two (depending on size of recipe) of bouillon powder in place of salt, as it contains a lot of salt (or a veg sock cube).

The pulses make it filling, and add protein. I add any herbs or spices I feel like that day.

This creamy tomato soup is so delicious. It makes a huge pot. Use 6 normal tins of tomatoes. Freezes really well.

I’m not usually a fan of carrot soup but this soup is so nice. Again freezes well. Can I recommend the marigold stock powder? I use the low salt vegan one and it really adds to how delicious the soup is.
