Pasta sauce recipes/ideas?

Looking for some nice pasta sauce ideas that my fussy DD’s will eat which I can throw together with fusilli or penne etc?

This is super easy and yummy. Spray oil a baking dish. Add a Boursin cheese whole and a pack of cherry tomatoes. Drizzle over a little decent olive oil , pepper and some fresh basil. A little garlic if you like. Bake for twenty minutes. Whilst baking cook pasta.

The tomatoes will have broken down, mash them up with the melted cheese. Stir in pasta. Fresh basil if you want. Yum yum

1 chop up some sausages and fry them in a pan

  1. Add onion, garlic, mushrooms and a red pepper (all chopped)
  2. once cooked off, add chicken stock, tomato purée and Passata
  3. Add black pepper, basil and oregano
  4. Cook until sauce has reduced and then add half a jar of white sauce (makes it creamy)
  5. Add to pasta and have it as it is pr mix with the pasta, top with cheese and whack it in the oven for 15 mins

I make creamy veg sauces. You can make them with any veg you like. I usually do courgette and also sometimes butternut squash. Think of it as making a blended veg soup.

So for the courgette one:
Sautee an onion and a few cloves of garlic
Toss in sliced courgette, sautee together a bit
Add some veg stock so that it's not quite enough to cover the veg
Cook til soft enough to blend
Chuck it all in blender and blend til smooth
Grate in some cheese, add a bit of double cream
Season with salt and pepper
You want a thick blended soup

When you cook the pasta, reserve a tiny bit of the pasta water before you drain
Stir pasta water and sauce in with warm pasta, serve with grated cheese

I do a delicious courgette one (and I don't even really like courgettes):

chopped onion and garlic
2 or 3 diced courgettes (I remove the squishy seedy middle)
Fry the onion, garlic and some of the courgettes
Add the rest of the courgettes after a few minutes so they stay a bit crisper
Add salt, black pepper and either a bit of chopped red chilli or some chilli flakes
Add either a pot of fresh pesto, or some garlic and herb Philadelphia to make it saucy
Eat with Parmesan and whatever pasta you fancy (I like the shells with it)
