Always curry or goulash (preferably in a pressure cooker).

If not slow cook for a pie, or roll in ready made puff pastry for steak bakes as someone said upthread.

With the goulash it was more of a soup with lots of paprika sweated down with onions and potato (carrots and peas if available). Taught to me by my Hungarian granny. Served with plenty of pepper and good bread.

When I was growing up if my mum said we were having stew for dinner or could literally by anything made with beef in sauce ( other than mince), so I tend to put in whatever veg and spices/flavourings I feel like on the day

Chilli. Cook it long and slow and add beans a few hours before end. Shred the chunks. Use chipotle paste and a bit of dark chocolate.

Slow cook with onions and seasoning, then add a suet crust pastry layer and steam another half hour or so.
