Very easy and healthy meals

hi
i’m suffering with ill health at the moment and dh is very busy. Please can you give me some ideas for very simple family meals (some veggie). Like very very easy! Baked potatoes are on my list but I’m looking for other simple dishes with very little prep.
I want to avoid just getting ready meals.

Are you able to do a bit of prep and shove things in the slow cooker? If so that could open lots of avenues

Salmon parcels- wrap salmon in foil with salt and pepper and put in the oven, serve with microwave rice or cous cous (just pour kettle over and leave), veg you could get the ready prep stuff Tesco do so all you have to do is microwave it.

Sausage/chicken/veggie sausage traybake

Sausages, halved new potatoes, chunks of onion (quartered no need to peel), quartered peppers. Bake in oven for 40 mins or so.

On the hob, peas and mange tout/broccoli/frozen sweetcorn etc. Anything easy. 10 mins for them.

Healthy and easy but you need to wait 40 mins for the sausages.

Baked risotto also very easy.

Check out the Hello Fresh app as they have lots of easy 20 min meals.

slow

This tomato and Boursin pasta is super easy, veggie and very yummy. We’re having it tonight with salad and garlic bread.

We had a chicken curry in the slow cooker tonight that has veg in it so you could just do microwave rice and that's it.
Pack of diced chicken, 1onion, 1 pepper, frozen green beans, ginger paste, korma curry paste, coconut milk- 1/4 can, stock and ground almonds.
We don't do any pre cook- just shove the lot in.
Recipe was originally from a baby led weaning app but we adapted for ourselves.

Tonight I have very finely sliced 3 red onions and 3 red peppers, sweated over a low heat for about 10 mins. Add 2 tins chopped tomatoes, a couple of handfuls of olives, salt and pepper, then reduced right down. As soon as this was on I measured out pasta and got that on, from start to finish it took about 20 minutes. DH and I will have ours later with a good whack of chilli flakes added

Someone recommended this site the other day.
I've made it for tea on the job with sweetcorn not sweet potato and it was delicious. Served with rice but would be great with naan.

I have coconut milk powder in the house not tins.

I have made enough for another meal and wish I'd made more.

Soups - roast the veg then blend with stock and cream as appropriate. Serve with a sandwich for something more substantial

Salads - buy the ready made bags if easier then add protein (tinned or pre-cooked), croutons, nuts, seeds etc. Ready made grain packs will bulk it out

Omelette and salad/crudités

Quesadillas are very easy to do with wraps and allow for lots of filling options

Steam fish and veg together to simplify cooking

Stir fry takes very little time, especially if you use the pre-cut bags of veg. Can be totally veggie and served with instant noodles
