Veggie “sausages”

Does anyone have a good recipe for Veggie “sausages”? I’ve had some really good ones at a Hilton and would like to reconstruct them. I remember Potato, carrot, courgette.

Sounds like a Glamorgan sausage? You could Google some recipes and see - that's what your description sounds like to me

Not a traditional Glamorgan though! I think that's just cheese and leeks but something along those lines

Delia Smith used to have a good Glamorgan recipe - back in the day before Cauldron. It's probably online and was my first ever 'meal' in home ec.

If the recipe can survive that, it can survive anything.
