Help with meal planning needed

We are going to try and eat healthier in the New Year so I need to start meal planning!! We were doing HelloFresh for awhile last year which I found really helpful as there was minimal prep to do and we just had them in order of when they were going to go out of date. We have run out of discount boxes now though so it's getting a bit more expensive than we'd like and we had some delivery ideas towards the end of the year which has put us off it a bit...

Dp does shift work so tea time is often sometime between 8pm-9:30pm which definitely doesn't help as by the time I've got ds to bed and tidied up I don't really have the energy to do loads of cooking...

Ideally what I want is a list of meals that are nice and filling but also simple and quick enough to put together at night for when dp gets home and then meals I can have on my own/with 16 month old ds when he's working later and then meals for all of us together when he's not working.

My DH did irregular hours and I found it much simpler to cook once for all of us and to eat with the DC.

We usually had an exception once a week where the DC had something beige and we had s takeaway or cooked s nice meal once they were asleep.

I wouldn't fancy starting cooking at that time of night either.

Could you do some things like these quesadillas which can be reheated for DH?

Cottage pie/ shepherd's pie
Curries
Stews
Sausage plait
Sausage and sweet potato tray bake
Pasta bakes
Soups

All of these can be served up for you and kids and left in the oven/ slow cooker/ on the hob for when hubby is ready to eat. Also all delicious and kid friendly 👌
