What can i do with pork fillet?

Got 2 large peices of pork fillet and need inspiration as to what to do with it??

Something lowish in fat would be great as i am on a diet atm.

If NOT low fat would suggest a pork version of beef wellington but expect you don't want the pastry!
I'd keep it simple as it's such a lovely cut of meat. Slice thinly, dry fry with onions, mushrooms, garlic, herbs add low-fat creme fraiche, serve wtih rice.

we have it sliced thinly and cooked with garlic,mushrooms, spinach & creme fraiche.

Served with roasted potato slices mmmm
