Argh! Filo pastry.

Filo pastry arrived yesterday morning and I put it away in the fridge - not realising it was frozen! Instructions say it should be used within 24 hours of defrosting and can't be refrozen. I wanted to make something with this on Boxing Day. Is there any way to use this, or will I have to brave the shops later today to buy more?

It should be fine but keep it in the fridge until boxing day and then give plenty of time to warm up before using. At worst it will be a bit crumbly in my experience. What are you making?

It's fine

Thank you both. Planning to make filo pastry parcels filled with cheese and veg. Hopefully it turns out ok!

Agree that should be fine but Could you not make them now, cook and then chill to reheat on Boxing Day?

Hmm, maybe that would work. Will see if I can find time to make them today. Thank you.

Also it's fine to refreeze phyllo.
