I have a half turkey breast at 7.5lb and a quarter turkey breast at 4lb. They're separate but will be cooked side by side in the same oven tray. Apologies if this is a stupid question but do I just cook for the length of time I would an 11.5lb whole breast? (40 mins per lb plus 20 addition mins according to the recipe I have). First time!

No. Because they are separate smaller pieces they will need different cooking times. So the bigger piece needs to go in first, timed for its size, and the smaller piece added later.

My experience is that they always take longer than the guidelines and it’s not the end of the world if you go over time, but you don’t want to be serving up undercooked turkey, so I would be scrupulous about pre-heating the oven and probably add on an extra 15-30 mins to be on the safe side.

Also, that 40 mins per pound sounds high to me - are you sure that isn’t per kg?

Thank you! I will double check the lb/kg thing for time and that makes total sense to put the bigger one in first. Silly me! So glad I asked!!
