Leftover turkey!

Being organised! What can I make and freeze with leftover turkey other than curry? TIA :)

We like the Jamie Oliver hodgepodge pie which uses left over turkey, sprouts, stuffing etc. We also use it up in salads in January.

Leg meat is nice casseroled in red wine and stock with mushrooms.
Breast meat can be shredded for Chinese stir fry with bean sprouts, water chestnuts, peppers etc. It’s also good cooked Indonesian style, with peanut butter, soy sauce, ginger and garlic.

Could make a pasta sauce too
Turkey arrabiatta?

Coronation turkey (or my version of it, no dried apricots of sultanas, replaced by apple and chopped grapes).

Turkey noodle soup is nice, but next year just buy a smaller Turkey.

Well we won’t have any leftover turkey! One of our guests kindly offered to buy the turkey - it now turns out that he expects to take it home after everyone has had a slice! He’s bought an enormous turkey so we can cook it for him using our electric, and he plans to take home the whole turkey bar the six slices that people will eat on their dinner!

What a cf!!! Did he end up taking it home?

Tomorrow I plan on making Turkey and veg soup.

I won’t have time to make anything else, can I slice and freeze the Turkey to defrost and use in curry’s etc at a later date?
