Bought a bigger turkey as love leftovers.
Obviously bubble and squeak on boxing day with turkey added.
Any other ideas and recipes? Extra points for curry alternatives!

Turkey and ham pie.
Turkey bbq sauce melts
Turkey fritters
Sandwiches with stuffing
Curry (all the varieties)
Shish kebabs (well, in pita with salads and sauce)
With pickles and chips
Turkey and mushroom noodle soup
Reheated in gravy with mash and peas.

I live in the west country so leftover turkey (and leftover stuffing/veg/cranberry sauce) gets made into pasties

imayhavelostmymarbles · 21/12/2022 23:43

Ooh pasties and turkey noodle soup sound good

Always turkey and stuffing sandwiches for supper that Christmas Day night (even though you’re stuffed and crippled with heartburn) and then turkey and pickles with homemade chips on Boxing Day. Whatever is left after that gets made into a lovely turkey, veg and potato pie with shortcrust pastry! 🤣

Ah, you saved me typing out this exact thing. Though I do puff pastry for the pie. And any leftover gravy goes in the sauce.

Sandwiches (with EVERYTHING in) are over and above the best bit though. Possibly exceeding the Christmas meal itself.

Turkey Supreme, a creamy white wine sauce served with rice.

Pasta Alfredo, cream and cheese sauce with diced turkey served with pasta, works especially well with tagliatelle or fettuccine.

Quick turkey risotto, add diced turkey, mushrooms and vegetables such as peas, green beans, or asparagus to a basic risotto, cook on stove top or in the oven. Stir in some cheese at the end of cooking.

Turkey pie with white sauce or left over gravy, plus vegetables such as broccoli .
Quick turkey stew, diced turkey, any root vegetables, tins of mixed beans, tomatoes, stock heated through in oven.

Turkey minestrone, turkey stock, peas, beans, turkey, onions garlic leeks carrots celery, tube pasta (or spirals or bows) tomatoes, simmered gently. Serve with grated cheese if possible.

Paul Hollywood's Leftover Christmas Pie. It is better than the dinner. Hot water crust, actually very easy, uses up leftovers. Serve with all the gravy.

Vol-au-vents! A big turkey pie would probably be a lot less faff though

Ilovehamandtoast · 22/12/2022 06:12

Jamie's turkey pie www.jamieoliver.com/recipes/turkey-recipes/turkey-and-sweet-leek-pie/ 😋

My mum makes this delicious turkey pasty on Boxing Day. It's turkey and Gruyère cheese and cranberry in pre made puff pastry and it is the best. I like it more than the actual turkey!

Piffpaffpoff · 22/12/2022 08:16

Leftover Boxing Day burritos - wrap whatever’s left in a tortilla (inc mash, sprouts, pigs in blankets etc etc), bake for 15 mins and then have with gravy as a dip.

BuckarooBanzai · 22/12/2022 08:20

Coronation turkey is very popular in my house! You can get the coronation mayo ready done. I throw in few grapes and pretend it's healthy!

picklemewalnuts · 22/12/2022 09:34

Hot water crust pie. Everything can go in, turkey, stuffing, ham, pigs in blankets, cranberry sauce, cheesy leeks... yum.

Stands on a bread board in the middle of a buffet, looking impressive!

I'm thinking about a terrine this year, too. I'll have more left over ham than anything else, so that might work really well.
