Pak choi - basically a chinese cabbage.
you can use it like normal cabbage or in stir fries etc

Good for stir fry, served with duck or salmon too

Or you can cut it in half, cut side down in a frying pan with a little oil / butter. After about 2-3 minutes chuck some water in, put a lid on the pan & steam finish. It's gorgeous.

It's park Choi, but its texture is more like Chinese leaves lettuce-crunchy at the end with soft leaves. Less fibre and more water than a cabbage.
