Have no idea what I want it to be.

I've chopped up some peppers, mushrooms, onions, broccolini, garlic, baby potatoes. Added salt, pepper, mixed herbs, Paprika and a little cinnamon. In a tray, in the oven.

What shall I turn it into?

Want something hearty, comfy, delicious

Pasties sound good. Or putting it all into a pie. Pies are comforting.

No pastry at home unfortunately, or the ingredients to make my own

Could you fry some tomatoes, add some spices, a little stock and chickpeas? Stir through your roast vegetables and serve with couscous for a make shift tagine.

Oooo yes this sounds good!

I have a can of mixed beans that's lived in the pantry for a while so I'll chuck that in.

Thank you

Feta on top of that would be great!

I'm doing similar for dinner tonight, potatoes, tomatoes, jarred chickpeas, peppers and feta! Going to add couscous on the suggestion above!

Sorry but your use of cinnamon has brought back a wonderful memory of my first date with dp, 15 years ago. He invited me round for a meal which he cooked but he really didnt know what he was doing, he made a stew and added alsorts of spices but the cinnamon what so overpowering, we often have a giggle about the cinnamon stew. 😂

It turned into a stew type situation yesterday which was lovely in the cold. Going to have the leftovers tomorrow and feta sounds like a good shout to bring it back to life.

This is so cute. It was a quarter teaspoon just for a depth of flavour. You couldn't taste it in the end but the veggies tasted really good.
