Christmas Eve easy but delicious dinner plan

I'm working Christmas Eve. We will be six for dinner, 3 vegetarians and 3 omnivores. I need a lovely, delicious and celebratory meal but easy to prepare, or can be prepared in advance. Any suggestions please? Oh, and one of the omnivores doesn't eat red meat.

2 toad in the wholes.one with veggie sausages one with meat.

Veggie casserole with dumplings

Ideas for mains:
Stuffed squash - the instructions tell you what you can do in advance
Luxury truffle Mac and cheese - there are lots of good vegetarian alternatives to Parmesan. I use Violife.
Mushroom Wellington - you can make this to the end of step 6 before hand. I serve it with braised red cabbage and maple roast carrots.
Cauliflower cheese pithivier - can be made ahead and frozen
Vegetable tagine - this freezes well and the pomegranate seeds make it a bit special.

Pudding ideas:
Winter bombe
Panettone pudding tart
Baileys tiramisu

Vegetarian cassoulet with sausages (cook separately some veggie, some meat, I like merenguez sausages fora treat). Cassoulet can be prepped or fully cooked ahead, I serve with the sausages and crusty homemade bread but can use good shop bought. I've also served it with duck, pork shoulder etc.

DIY nachos/tacos

Warm up some tortilla chips/taco shells
Make some chilli and a salad
Serve with lots of sides - sour cream, avocado, rice, olives , grated cheese
