i have discovered that it is very unfussy - you do have to take out the seeds in the middle, but you can peel it or not as you like. the roasted peel is edible, just slightly chewy. you can just cut it in half and scoop out the seeds and drizzle on some oil, or chop it into cubes and oil it up a bit. I sprinkle on some herbs, thyme or anything will do, and roast it for about 20 mins then check it and give it a bit longer if necessary. you can cheat if you have a combination microwave and microwave it a bit while you roast it. it is YUMMY and so far I have NEVER had a failure! go for it.
