We serve this with jackets or mash. But I'm sure you could put small waxy potatoes in with the carrots if you wanted a one pot meal?

Herby roast chicken tray bake.

Thank you both. Will incorporate that in my menu plan. Have also done the miso leeks with chicken by Nadia Hussein. Big success. Any soupy recipes?

You could do a chicken and veg hotpot with sliced potato top

mathanxiety · 09/12/2022 22:38

I do a chicken stew involving chicken, onion, carrots, and celery, with dumplings on top.

Squamata · 09/12/2022 22:39

Honey mustard chicken www.bbcgoodfood.com/recipes/honey-mustard-chicken-thighs-spring-veg

Loads of variations on the recipe, this is a tray bake but I do it as a pressure cooker stew.

I do this with baby potatoes or boiled potatoes and broccoli. They love it.

I also do a one pan thing with onions, garlic, lemon (if I have it) chicken, potatoes and any herbs I have. Splash of white wine if available. it is lovely. loosely based on a Nigella recipe which is a loose recipe anyway.

Cocoisablessing · 09/12/2022 22:50

I have done honey garlic chicken pieces before. Seemed to be very popular in Pinterest and the kids loved it with risotto rice.

For thighs get a Maggie bag (I like paprika in particular. Then make gravy from the juices and have that over roast potatoes and veg. It is divine!

Tonight we had chicken thighs, onion, curry paste, a packet of baby tomatoes, a sweet potato and two standard potatoes,, some garlic, a teaspoon of Bouillon powder. Everything fried off, cup of fluid, slow cooked for 6 hours. Served with a bit of rice, but not a lot. Yes I know it was double carbs (triple!) but actually didn't seem it.

AinmÁlainn · 09/12/2022 23:11

For soup, chicken thighs, onions, garlic, whatever veg you have (I like carrots, courgettes, sweet potato and mushrooms) and stock with a splash of balsamic vinegar and Worstershire sauce. Delicious as is or blended. Otherwise www.bbcgoodfood.com/recipes/vietnamese-chicken-noodle-soup. I use carrots and sugar snaps/mange tout sliced up but very small broccoli pieces added for a minute at the end would be good too. And if you add more stock and cook the noodles in the broth, it's amazing.

Pie!

Tr1skel1on · 09/12/2022 23:18

I've cooked a few times a Zoe Laughlin recipe from the kitchen cabinet R4 program. Get a big oven proof dish. For 4 people you need 8 onions (trust me!) carrots and celery chopped. Not finely chopped, big bits work well. Add veg stock, I use marigold bouillon, marmite and a good splash of Henderson relish. Put enough in to cover the veg. Add lots of dried herbs, sage, thyme, anything you've got really.Thinly slice some potato, you want 2 layers on top, bottom layer cooks in the stock, top layer crisps up. Brush the top potato layer with a generous amount of melted butter. Put in the oven for at least an hour. It's perfection in a dish and an instant family favourite

I often do a Mediterranean casserole type thing with chicken potatoes carrots onions tomatoes and if I have sweet pepper or courgette from mil garden I bung that in too. Olive oil, mixed herbs, lots of seasoning, squeeze lemon and it cooks on low/ Med heat. We eat it with crusty bread for dipping. Really easy and delicious
