Fancy some roasted courgette but what can I make with it?

is this a vegetarian meal, or roasted courgette as a side dish?

Courgettes are not in season at the moment - why not do something more February-ish?

Some kind of slow braised dish or pot roast, with lots of seasonal veg and a crumble for pudding, or perhaps poached pears - or something with rhubarb
