Meals over xmas

I'm looking for ideas for meals over the Xmas New Year fortnight. They don't need to be flashy. I'll have more time than normal, we're all off school and work so this always turns into a bit of a chore and I'm bored with my normal go to meals.

So suggestions greatly received

Not involving Christmas Day leftovers, I assume?

I love my Christmas leftovers but then I find myself craving vegetables and salads as a corrective to all the rich Christmas food.

Soup
Ratatouille with beans or lamb, rice or couscous
Curry, dhal, rice/naan etc
Vegetarian lasagne or moussaka, salad of some kind

The beauty of all the above is that you could make enough for two meals in one go and get the second one into the freezer so when you are all back at work/school you have some easy meals already sorted.

Then for quicker meals:
Omelettes
Warm salads
Stirfry and noodles

After Boxing Day I want a break from Christmas food, although I'm happy to keep ploughing through leftovers but more likely to use these for lunches, so dinner can be different. Or if I do use up leftovers for dinner they need to be in a totally different guise. I plan spicy vegetable curries with home made chapati, lovely winter salads with roasted butternut squash and pomegranate seeds. A couple of fish dishes, probably a stir fry. So basically lots of veg and flavour!

Thank you all! Yes I need veg and colour to offset the chocolate and beige food. I like the idea of curries - I haven't made one from scratch on ages. And simple stuff like panhaggerty....

I love the Nigella Express recipes. I'm not a keen cook at all but these have not many ingredients and are fairly quick. Family favourites include her chilli and curry in a hurry. Look out for one tray recipes too.
