Has anyone successfully made gluten free choux pastry?

Cooking for friends at the weekend . One needs gluten free, dairy free and no chocolate. As a result people usually make him fruit salad or similar. He loves it when people make him cake so I've often done that but would like something different this time. I'd like to make profiteroles, filled with whipped dairy free cream and I'll top half with caramel, which he can have if I use plant based butter and half with chocolate for variety for the others.

I don't have time to experiment - has anyone made choux pastry with gluten free flour? Will I need xantham gum? I'd rather not as not sure I have time to go looking.

Gluten free pastry is not easy at all IME and I've given up trying, you're even braver to consider making choux!
From memory, the beginnings of choux are similar to making a roux which I do for cheese sauce- it doesn't blend well when I use gf flour but it's fine for my lasagnes.
Xantham gum is sold in most major supermarkets next to the flour in the free from aisle- use less than they tell you.

Look up Becky Execell gluten free profiteroles. Her recipes are very good.

@marriednotdead that's what I feared! @CraigDavid I'll take a look thank you. Am thinking I might give it a go, but make some meringues as well as back up

Yes, meringues with either vegan cream or use coconut yoghurt and decorate with mango.

Yes I have and they came out great..I made them last Christmas, twice! I don't remember exactly what recipe I used but it was one without additional xanathan gum. I used Bob's Red Mill 1 to 1 Baking Flour and now, just thinking about it, I may have used the Bob's Red Mill recipe from their website.

i haven’t made them myself but a contestant on Australian Master chef got amazing feedback on hers. This was the recipe she used
