What makes the perfect chicken roast?

I love a good roast! My chicken roast usually includes roast chicken, gravy made from juices, peas, carrots, cauli cheese, stuffing and roast potatoes. I was always told that Yorkshires should only be served with beef but I have been known to sneak one onto a plate with chicken. I'm such a philistine 😂

So, is there a 'right' way to do a chicken roast? What are your 'must have' veg/sides? Is cauli cheese really a big no no?

To me it's lots of garlic and half a lemon inside. Herb seasoning. I love roasted carrots and parsnips too.

I have to have bread sauce with roast chicken, and the stuffing needs to be made into balls.
I too am in the Yorkshires go with everything camp and I am from Yorkshire.

Cauli cheese is a no with any roast.

Roast potatoes, steamed carrots and broccoli, onion gravy made with the juices (put chunks of onion in the cavity). Sage and onion stuffing goes well too.

I'd eat cauliflower cheese with anything, but my dc don't like it Hmm. Weirdos.

I don't have a set collection of sides to go with roast chicken tbh. We go with whatever we fancy. Sometimes we roast a whole chicken with soy, honey and five spice and have it with rice or noodles. I'd never have Yorkshire puddings with anything but beef though.

I LOVE cauliflower cheese, just don't think it goes with a roast, it's a meal in itself, maybe with a few chips and some green veg.

Skirlie or mealie ( oatmeal type stuffing) is the most important part in this house, but I do like garlic/ lemon marinade on the chicken, and lots of gravy.

Lots of veg, roast and mashed potatoes. I wouldn’t make yorkshires normally with chicken, but I would never turn one down if someone else was cooking.

We have same as you @AndfinallyImGoing but with extra veg usually parsnips and savoy cabbage/broccoli. Mashed potatoes for DD too.

Always yorkshires.

I’d be delighted if someone served me exactly that roast, OP. Cauli cheese really ought not to be right with a roast, but IMO it just is. No one else likes it, so I never get it - but there’s a pub near where DD has gone to uni that does it as an extra, so we’ll be going there again!

Add sliced chorizo to the chicken pan a few minutes before the end and then mix the juices with the gravy.

Cauli cheese & yorkies compulsory.

I keep mine very simple.

Good quality chicken with olive oil and fresh lemon juice squeezed over. Half lemon and fresh thyme inside.

Roasties

Roasted garlic and shallots

French style petit pois

Home made gravy

And Bob's your uncle!

My chicken is in the oven! Butter mashed with garlic and herbs under the skin, potatoes and parsnips roasting around it. I too always have yorkshires!! Leeks and carrots with it today and loads of gravy!

Chicken stuffed under the skin with butter, thyme, lemon zest and finely chopped pancetta. Lemon and garlic in the cavity and pan.

Sides:

cauliflower cheese
rosemary and garlic roasted potatoes
honey roasted parsnips and carrots
sliced runner beans
braised savoy cabbage
pigs in blankets
stuffing
gravy made from the pan juices, garlic etc.
red cabbage in the winter months too.

Butter under the skin , oil and herbs on top, lemon up its bum, whole garlic cloves in the pan (added half way through)

Herby roast new potatoes
Something green and clean - cabbage, cavolo nero, green or runner beans
Roast parsnips in season

Jus (not gravy)

pretty simple but that means we have it more often

Today we have had the last roast before Christmas dinner.

So we have had what we love whether it goes or not.

Roast lamb. Red cabbage. Potatoe dauphinois for Dd and me, aunt Bessie roast potatoes for DH, stuffing balls, petit pois, broccoli and asparagus, cauliflower cheese.

Different variations of seasoning lemon/sage/garlic. Sprigs of thyme in with roast potatoes gives them a delicious flavour.

Green beans, carrots, cabbage, broccoli. NEVER Mac n cheese.

Don’t make chicken roast with yorkshires but I wouldn’t say no if I got served them with chicken.
