Squash Recipes

[NoNameNowAgain]

I still have nine winter squashes lying around the house in suboptimal storage conditions. What should I do with them? I have just made soup but don’t have limitless freezer space.

This is freaking amazing. Use twice as much squash than the recipe says though.

Lovely recipe. Agree on more squash.

Also cut squash into segments (like a chocolate orange), sprinkle with seas salt and pepper, and roast. A snack with dips, or place three on top of a risotto / other dish and garnish.

I've only recently tried pumpkin in a thai curry- what a revelation! Ditto butterbeans.

Whenever I have a glut of anything, I try to make it into a creamy pasta sauce. Squash is great for this. Basically, roast and then make into a thicker than normal blended soup, add parmasean and double cream, served mixed into pasta with more cheese on top and green veg and garlic bread.

I will start tomorrow. Yesterday I did an Anna Jones bake. It was ok but not great.
