I did google this but not very informative I’m afraid, i am making some mushroom pate and I forgot onions, recipe does call for a small onion, id usually use half an onion - I have two bunches of spring onions - would some of these be okay instead of onion, the whole thing is puréed up at the end anyway, can anyone advise please ? 🧅

TIA

ONIONS obviously 🫣

I don’t use them in anything, literally make any recipe without adding them. You don’t really need them! Try garlic instead.

TwoMonthsOff · 19/11/2022 20:52

@Muniononion
Oh no ! made it lots and always use onion and garlic and ginger …..im sure it will be fine just cannot face another trip to shop…..for an onion

Spring onions grow into larger onions if you leave them. They will be fine instead of onions as they are actually onions.

Choconut · 19/11/2022 20:56

I don't eat onions as they do bad things to me, I would substitute with spring onions (although I can only eat the green bit) The white part though would give more oniony flavour, I would use them but the flavour might not be quite the same. I really wish I could eat onions as i love them!

TwoMonthsOff · 19/11/2022 20:57

@AlisonDonut
thanks Alison, you never know it might even be better 🙂you know that feeling when you get home and think aaargh and can’t face going out again especially for an onion

Yes, spring onions would be fine to use. Also part of the allium family, smae as onions and leeks. I was going to suggest onion powder if you didnt have the spring onions.

AdaColeman · 19/11/2022 21:00

Yes you could use your spring onions as a replacement, chop them and fry very gently to soften them, you don't want them to burn. Also you could use garlic if available, again don't let it burn.
No one wants another trip out to the shops!

Maybe think about keeping some frozen onion in the freezer for emergencies?

TwoMonthsOff · 19/11/2022 21:01

@MarmiteCoriander WRT to leeks there is a recipe for the pate that uses leeks but I’ve not tried them.

thank you for all the replies - so helpful and kind and no trip to the shop again for me 🍷

I've just started freezing my own onions, got fed up of them going mouldy when I bought a big bag! Just slice them up and pop in a take away container. Easy to prise apart and chop whilst still frozen .

TwoMonthsOff · 20/11/2022 12:13

@booksforever that is a great idea - i could do one onion per bag...It didnt occur to me they froze tbh .i do it with celery as never use the whole head but have to part cook that. I always feel guilty about throwing vegetables away as all that effort to growing them has been a waste

@MarmiteCoriander @AlisonDonut
Pate has emerged perfectly using the spring onions thank you 🥰 Marmite - the ingredients on my list may be a bit off if you haven’t made it yet ….I used 500g mushrooms with that wine ratio. Took 12 minutes to reduce, just to let you know, (dont really need the wine anyway but I like it) sorry 250g mushrooms does not make much but okay if it is your first time making it, anyway here is a pic.

@TwoMonthsOff Thanks so much for the pic x

TwoMonthsOff · 20/11/2022 20:39

@MarmiteCoriander its a bit blurry as i compressed it to 'small' but i have to say its one of the best ones i have made - please i would be so interested to hear/see how yours came out.
it is one of those where you dont really have to be too precise but I have never made a bad one, id say my first attempt's needed more cheese - but i love cheese not everyone does ( I used almost the whole pack of Gorgonzola) !
