Batch cook puddings

So, I know it's not really essential in these times but a pudding really cheers everyone up and my daughter always wants one! I'm time short so wondered whether the batch cooking principle could apply to puds? I make mini crumbles in individual pots which can be kept in the freezer but if clever people on here have some other simple batch cooked pudding ideas I would love to hear them... or in fact any easy pudding ideas to keep children happy!

Sticky toffee pudding, just make a big one and wrap slices individually. Could probably freeze small portions of the sauce in little tupperware ( left over from baby food in our house!!)

I was thinking cakes too... and maybe flapjacks but do they freeze?
