I made Parkin for bonfire night and it was rubbish - not sticky and moist but really dry.

does anyone have a well-tested and excellent Parkin recipe? How long do you leave it to mature for?

I think I use the one from the Bero book - it was copied into my home recipe book years ago.

Add extra treacle/ golden syrup - you need quite a lot - and reduce the oats/ flour a little.

I use the easy Parkin off bbc good food website, but you need to leave Parkin to sit for a few days wrapped up, minimum of 5 days I would say, and it moistens up and is much better!

Sorry this recipe is in imperial, but as you can see the proportions are very simple to work out.

8 oz self-raising flour
8 oz oatmeal

4 oz lard
4 oz butter

8 oz brown sugar
4 oz treacle
4 oz golden syrup

2 tsp ground ginger or however much you like. I like it really gingery so I add more than this.

Melt the fat and syrups and mix in the dry ingredients. Spread into a greased tray and bake at 140ºC for about an hour.
