Delia’s oriental pork casserole question

It’s from her how to cook book 2. Might be a stupid question but it uses 900g of pork shoulder. Should I use pork shoulder steaks or the whole pork shoulder with fat and skin?

You need cubed pork - like you would for a casserole - so taking excess fat and skin off if it's a whole shoulder and cutting it up. You could get away with steaks as long as they are reasonably thick. There's a very similar one with chicken thighs that I make a lot too. So flexible, in short!

Thanks. The one with chicken thighs I’ve been making for years as all my kids love it but DD loves pork so wants me to try the pork one
