Could you please share your favourite pumpkin soup recipes please?

First, please make sure it's a pumpkin that's meant for eating. The carving ones are watery & tasteless.

It's not actually pumpkin, but we call it pumpkin soup. 1x Butternut squash, 1x big sweet potato, 1x red onion, 3-4 cloves garlic, 2x big carrots, 2 mugs veg stock and 1-2 tspn dried ginger, simmer until everything is soft them blitz, is our go to here.

Aaron from Masterchef the Professionals posted this recipe on his instagram a year ago and it is wonderful. I have done it with butternut squash with great success.

Ingredients (serves 4 generously)
1 white onion
3 cloves garlic
½ delica pumpkin
½ violla pumpkin
30g olive oil
30g butter
1l whole milk
1l white chicken stock
1 sprig thyme
150g Disaronno
½ ground nutmeg
Salt
Black pepper

Method

  • Slice onion and garlic finely.
  • Peel and cut the pumpkins into rough chunks. Save the skin and seeds.
  • Slowly warm the oil and butter in a large pot until lightly foaming.
  • Sweat the onion and garlic in the pot with a pinch of salt, keep the heat fairly low, we don’t want colour.
  • Add the pumpkin chunks and sweat on low heat, covered, for 40 minutes to 1 hour, stirring occasionally, it will be ready once the pumpkin has released liquid, is soft, and breaking down.
  • Meanwhile, in a new large pot sweat the discarded peel and seeds.
  • Then add the milk and chicken stock to the pot with peel and seeds and allow it to softly simmer for 40 minutes to 1 hour, add thyme half way through.
  • Meanwhile, boil the Disaronno in a saucepan. Set aside.
  • Sieve the stock/milk mixture into the pumpkin.
  • Blend until completely smooth.
  • Finish the soup with the Disaronno, nutmeg, and black pepper.
  • Taste for seasoning and adjust as required.
