I’ve been ordering a Fiorentina in Pizza Express for at least 25years, so not a fad. The egg is always properly cooked there though.

They might be those well known cows eggs.

One of my favourite pizzas, although always had added pepperoni

I had a really delicious one in Zizzi which wasn't on tomato sauce but a kind of white cheese sauce and with pancetta. It was so good but I do have to ask for the yolk to be cooked, I hate runny yolk.

It is only on specific pizzas like the fiorentina and a couple of others. The yolk should be runny but not snotty.
