Need inspiration for tonight's dinner please - what are you having

Haven't got much in the fridge - but have access to butcher, Tesco's and maybe fishmonger (are they open on Mondays?.

Have had haggis neeps and tatties every night since ds tried it at nursery on Friday - so looking for something differnt!

god...i'd kill for some Haggis, but notmuch availability in Holland!

We're having paprika chicken tonight. Chicken thighs (cheap), red peppers, onions, smoked paprika, tin of chopped tomatos

fry some onions and red peppers (and a green one too if you want to be really daring ). Put in a casserole dish.
roll the chicken thighs in a little flour and fry with garlic till browned. Transfer to the casserole dish.
Add the chopped tomatos to the dish you fried thechicken in (will soak up the leftovber flour which will thicken it)
Add a dollop of tomato puree (or ketchup), a teaspoon of paprika powder 9smoked is yummiest, and a dash of balsalmic.

Bing in casserole dish with everything else and a dash of red wine (if you like), or a little stock. Add salt and pepper to taste

put in oven at 180 degrees for an hour or so.

serve with rice, or noodles.

children love it because the chicken is very tender and it's a kind of sweet dish.

I made ours last night - just has to be reheated!

Kids are having plaice goujons, mash and veg.

Hubby and I are having undyed smoked haddock and ? and veg.

mmm - might not have time for paprika chicken tonight - but will sort out head/stuff for tomorrow night - sounds yummy.
I think I'll nip past fishmongers and see if he's open and get some salmon for hoisin salmon and noodles.

Children are having homemade pizza muffins with various raw veg and homemade hummus, then fruit and yoghurt. For dh and I it is Roasted duck fillets with marmalade and chilli glaze with spinach and sauteed potatoes, followed by pears poached in masarla wine with vanilla cream.

buggering fishmongers was closed - so will have to knock up a tomoato sauce and mix with pasta. Only have 1 chicken breast to chop through it - no spicy sausages! drat.

Ratte potatoes baked in the oven with rosemary, garlic and sea salt.

shopping delivery today and we couldn't fit it all in freezer and the kevins were alst so thats what we're having

TracyK I have made them in the past from scratch with egg and bread crumbs but these were ready done ones tonight. Very nice they were too and all the kids liked them.
