Any suggestions of quick(ish), cheap and reasonably healthy meals would be appreciated please Smile

No dietary requirements, very happy to use the slow cooker.

Mongolian chicken casserole
Sausages/veggie sausage cassoulet with broccoli and green beans
Chicken, bacon and leek filo topped pie with peas and carrots
Stuffed butternut squash (I'm experimenting because I'm thinking of doing it for Christmas but need to play around to sub out the nuts) not sure on sides but maybe roasties, the rest of the leeks and green beans.
Cauliflower, chickpea and red pepper curry with rice/ cauliflower rice and my friends mango chutney which is absolutely amazing.
Tuna, chilli and sweet potato fish cakes. Probably just with salad, might do pickled carrots, red onion cucumber ribbons too.

Kedgeree (Delia's recipe) is making an appearance on our menu this week after many years absence. Add extra veg, definitely peas but cauli / broccoli works well too.

Mary Berry sausage tray bake, again with extra veg.

Fish finger tacos
Egg fried rice
Turkey burgers
Baguette pizzas with potato wedges and salad. I’m going to use the remaining passata in tomato and basil soup which we’ll have with cheese toasties one lunchtime.
Stuffed sweet potatoes
Cauliflower and lentil curry to use up the coriander from the burgers

I've just been planning myself - I don't have a slow cooker but I do have a Wonderbag which I will use on Sun, Mon, Thurs and Fri this week:

Sun: Beef stew
Mon: Butternut squash dal with raita
Tues: Jacket sweet potatoes with avocado and feta cheese and coriander
Weds: Schnitzel, pickled cucumbers, boiled potatoes
Thurs: Leek & potato soup
Fri: Chinese - rice, greens, braised pork belly with chestnuts
Sat: pizza & leftovers (if any)
